Send in the Scones!

posted Saturday, 10 January 2009
I've gotten drop biscuits, cut-out biscuits and English muffins figured out. Now on to scones! My first try was of the Cook's Illustrated version of oatmeal scones. I think they will need a bit of practice and maybe combining with the King Arthur version .  Send me your scone recipes! And savory scones are sounding wonderful!

This probably isn't what you want. This is my hurry-up method I used when I was late getting the Inn guests their due:

2 pounds of cold butter. The better the butter, the better the scone. In the food processor with 12 cups of flour. Pulse lightly until corn meal consistency. Add 3 teaspoons baking powder. Add 1 teaspoon baking soda. Add a pinch of salt. Into a mixing bowl and do the rest by hand. Add two eggs and enough buttermilk to make a tacky ball of dough. Vary it with sun dried fruit, fresh berries, CHOCOLATE, cheddar cheese and bacon.

I roll the dough on a floured surface to 1 inch and cut triangles. An ice cream scoop works. Put them on baking paper and (HAH! HAH!) in a hot oven until they are done!
